About This Project

Olive oil is a highly efficient energy storage medium for arid climates like ours here in the south east Peloponnese. Most of the organic matter coming from our trees, from living or dead material to waste, is eventually recycled on our farm. All the energy that enters our farm’s ecosystem as light energy, and is trapped by photosynthesis, will eventually be converted sustainably to liquid health: olive oil.
