About This Project

The end product of the tree’s photosynthesis, the olive fruit, contains mesocarp cells which produce tiny droplets of liquid health. As soon as an olive is separated from the mother tree, enzymes are released inside it, which rapidly break the oil down into a kind of watery, microorganism-rich compost around the seed, an ideal microenvironment in which to germinate.
