About This Project

Our organic olive oil is a cocktail of different fatty acids (predominantly oleic acid), the proportions of which change according to factors such as the cultivar of the olive, the climatic conditions it grows in, and the amount of water it receives (particularly as it affects the polyphenolic content), and various other influences.
