The olive-tree leaves as a source of high-added value molecules: Oleuropein

Olive leaves constitute a copious by-product from the olive tree cultivation and can be found in large amounts in olive oil industries and olive groves. They contain simple phenols, flavonoids, and secoiridoids. Among them, oleuropein, which is the major secoiridoid compound in olive leaves, has shown interesting biological and pharmacological properties, in large part attributed to its putative antioxidant and anti-inflammatory effects. Consequently, valorisation of these by-products is worth addressing.
