The article by Mrs Vaso Chrisostomidou describes the project of Rhizoma and gives an interesting insight in the managing part of the project. It basically describes the the love of EVOO production that led the founder of Rhizoma Olive Farms to combine his teaching duties, as biology teacher in the International Baccalaureate, with the cultivation of their land. It allows the reader, in a very well written article, to realise what determination and enthusiasm are able to do combined together like science and tradition are combined for the production of one of the best organic EVOOs produced in Greece.
