When 3 generations of quality olive oil production gets to the next stage is when rhizome is born. We are lucky enough to stay connected with our land to keep it functional under very difficult times and to even enrich it with more trees. Making an excellent EVOO is a mix of art and science much the same way creating a wonderful wine is. Mother Nature with the weather, soil conditions and pests plays a huge role but all of these things must be managed and balanced by the farmer/manager. This is where the wisdom of past generations comes handy.
